Lemon zest

Before juicing a lemon, remove the zest with a small zester, put it in plastic freezer bags and use it in sauces, etc., still in it's frozen state.

First off, thank you to the many viewers who sent birthday wishes – they were most appreciated.

Actually my 60th birthday turned out to be a rather special affair. We were in Paris and celebrated the occasion in the restaurant at the Eiffel Tower with my brother Don, his wife Noelene and a few friends. It was magical!

Ruth and I were also fortunate enough to manage a very sought after couple of seats at L’Atelier de Joel Robuchon the very next night. A fascinating experience – you sit around an open kitchen and can either select small individually priced degustation-style portions or, in a more traditional style, entrée, main, etc. The food was brilliant and, in fact, I would have to say that this was the best meal I have ever had – a bold statement, to say the least! Also, it was definitely my style of food – ultra fresh, sparkling flavours and without any thought that 10 people had had their fingers in it (and no silly stuff like red onion ice cream, licorice foams, or the like). And the service was friendly, informative and efficient to boot.

Meanwhile, on the home front, we recently visited South Australia’s Eyre and York Peninsulas – talking about great ingredients! One of the highlights was eating Coffin Bay oysters in a boat amongst the oyster beds themselves – they don’t get much fresher than that. And the local snapper, whiting, tuna and kingfish wasn’t too bad either – all of which almost went directly from the water to the pan – wow! Anyway, these and many more interesting stories and recipes will appear on the show early next year.
